Next up in the series is The Wandering Chef. Maria Aros and Wesley Rosati make up the dynamic duo behind The Wandering Chef and we'd love to introduce you to their story!
Maria Aros began her cooking career over twenty years ago. She graduated from Baltimore International Culinary College in 1993. In the time since graduation she has worked as a line cook, Sous Chef and Chef. She has worked in small restaurants, run large corporate dining facilities, hotels, and private clubs as well as on catering trucks for major motion pictures.
Born and raised in Brooklyn to Italian Immigrants, Maria is very connected to the flavors of Italian America. Now living in Lucketts, Virginia, her career has taken her to Pittsburgh, Baltimore, Washington DC and New York City. Most recently in the Northern Virginia area, Maria has graced the spaces of Belmont CC, The Hyatt Reston, Lansdowne Resort and The Ashby Inn.
Wesley Rosati has over 20 years of experience in the culinary industry. That experience spans privately owned restaurants, corporate chain restaurants, private golf clubs, corporate dining and a 4 Diamond Resort. The most recent experience before starting The Wandering Chef was as Executive Chef of Lansdowne Resort overseeing the hotels extensive culinary program and scratch cooking kitchens spanning several restaurants and vast banquet and special event business.
Wes' formal culinary training came from an American Culinary Federation Apprenticeship through Northern Virginia Community College. He also received a degree from the University of North Carolina at Chapel Hill in 2002. Wes was born and raised in Fauquier County and has a love of the Virginia countryside and all of its culinary offerings.
Maria and Wes came together in 2013 to start The Wandering Chef. Both chefs wanted to strike a balance between a culinary outlet they controlled and their families. The company began with some cooking classes at a local farm and moved into pairing dinners with local wineries and distilleries picking up catering along the way.
Since both chefs are parents, the idea of a carry-out driven restaurant -- created to help parents feed their families good food -- became an impassioned venture.
The pair stumbled onto an old cooking school that presented "good bones" to become a catering kitchen and storefront for prepared meals and quick service menu. Located in Ashburn and surrounded by family activity centers, these chefs think the "grab n go" case is a huge asset for parents looking to feed their families well, yet not break the bank. The Chefs hope to get the support needed to grow their line of products and to use local and organic ingredients as well.
